Keto-Tastic.


I guess it's been about a month since I started the Keto diet. In that time I have cut out 99 percent of the soy, all of the sugar and refined flour, and cut out almost every carb. I have lost a total of four pounds. It's a little disappointing, but the upside is that the inflammation in my legs and knees is way down, and the pain is way, way down. So I will keep on keeping on, for now. 
Along the way I have learned a few things. Such as, there is soy in evvvverything. Heavy whipping cream has stabilizers in that cause inflammation. And Duncan Hines Keto cookies are awwwful. 
I made a batch last night, and I kid you not when I say I was up all night with gastrointestinal distress. Just in case you wanted to know that. It was not Keto-tastic.
All that being said, I am not in ketosis. Haven't been for days. The reason why escapes me. Eggs and bacon for breakfast, with a cardboard flavored piece of no carb Keto toast with butter. Coffee with real cream, 2 cups. 
No lunch. Cheese stick and a few pecan pieces for a snack. Green beans, spinach and a hamburger patty with cheese, mayo, and mustard on it for dinner, and an ICE drink to go along with. Seems like it should be working. I'm not sure exactly what I should cut out next. Or add. 
On a better note, the house is peaceful. Rain is coming after months of nothing. Mom's house didn't burn down today, although with an out of control fire nearby, everybody was on edge. My friend Bobby has been released from the hospital. Steven made it safely to rehab. BOTH of my younger kids are on their way back to college soon, and my oldest just got a promotion, and my dog is the cutest dog in the world.  Seems like the Lord is working some things out. 
I look around and I am just so full of gratitude for all that He has done. Jesus IS, indeed, Lord of all.
