Woke up this morning to very little pain. This is still a miraculous thing for me. I haven't yet reached the time that this is commonplace, so I tend to talk about it a lot. Nobody wants to constantly hear about other people's aches and pains, or lack of aches and pains, but I just can't get over it. I have been hurting so long and had given up hope that it could get better. I can't get over it.
The Mr. still isn't feeling well, so a repeat of yesterday. Out to the garden with the coffee and Bible and some Heavenly conversation. I really enjoy sitting in that holy place, talking with the Holy One, building a foundation for the day, and for my life.
This ended when Sue arrived and I went in to try my newest Keto breakfast recipe. I had seen this on one of the Keto You Tube channels (Serious Keto) and was intrigued because it was so simple. One cup of cottage cheese, in the food processor until smooth, and add two eggs. Continue to process until the egg is incorporated. Add seasoning. He suggested Everything Bagel. I like that, so I did the same. And that was it. It looked like a batter. It smelled like a batter. He has a full size oven, so he popped his in at 350, after he poured them into a muffin tin. He didn't fill the tin full, maybe a third or so full. Bake for 12 or 13 minutes, take them out a minute, let them cool a minute. Flip them over and return to the oven for about ten more minutes, and Wa Laa! You have Keto breakfast sandwich bread. I don't have a full sized oven yet, since the kitchen is still in reno, just the toaster oven that also bakes, and I don't have a muffin tin small enough. So I used the noodle God gave me, and got a cake pan and three silicone egg rings. I put the rings in the cake pan and poured the batter in. I flipped them at the appropriate time, and put them back in, When they were done I had a taste, and I was indeed, extremely surprised at how good they were! I thought they would be eggy. They weren't. I thought they would be cottage cheesy. They weren't. They were darn delicious! I don't truly know if you could make a sandwich out of them, in all honesty, they didn't quite have the sturdiness of bread, but what I did instead was put the keto "bread" on a plate, with a sausage round on top then a slice of cheese, and then an egg, over easy. The Mr. couldn't stop talking about it. It was an all around hit. This would be great with a hit of hollandaise sauce, too. Maybe with the sausage on the side, though, and not on the "sandwich".
Later we had to go to town to drop off some stuff for Social Security. We swung into a couple of stores to browse and get some shoes. The Mr. had told me he still wasn't feeling well, and as we were leaving Target he almost passed out, and started to fall. He caught himself and I helped him out. He said he was feeling "spinney", which is his terminology for light headed. It had been some time since Breakfast, so I assumed his blood sugar was low. I got him some chips and we headed straight home, me driving. I fixed dinner a little early, and he was ok for a bit, but later returned to feeling "spinney" and had to lay down. He is still in bed and says something is not right with his head. If he isn't better by morning we will be hitting the ER.
Praying for Florida, tonight. Cat 5 hurricane with 180 mph winds. Also Praying for Israel tonight on the anniversary of the horror that was October 7, 2023.
